Foodie Friday: Fiesta Queso Burritos

Last week I shared with you this recipe that I made using one of the Velata Artisan Rubs and this week I have another Velata creation! It’s no secret that my family loves enchiladas, burritos, tacos, etc. So this was pretty easy to come up with! My husband isn’t a huge “bean” fan, but I thought I’d give it a try! And these were delicious!

1 pound hamburger
1/4 C diced onion
2 cloves of diced garlic
1 can pinto beans (drained)
1 can kidney beans (drained)
1 can of diced tomatoes (with green chiles)
1 8oz container Velata Fiesta Queso Cheese
Shredded cheddar cheese
Taco shells

Brown hamburger, add onion and garlic and saute for 2 minutes. Add tomato, beans and Queso cheese. Stir until cheese is blended.

Put a little of the filling into the bottom of a greased 9×13 pan.
Add filling to each shell with a spoonful of shredded cheese. Adding the rest of the filling over top of filled burritos. Bake on 350 for 25 minutes.

Happy Foodie Friday! And don’t forget to check out Velata on Facebook!
