Foodie Friday: Stuffed Peppers

Happy Friday everyone! It’s been a long week and I am so excited for this weekend. My husband and I are going to be rocking out at Bon Jovi come Sunday evening, and I CAN’T WAIT!

But first, a couple of nights ago I decided to try my hand at making stuffed peppers. I have never been a huge onion/pepper fan, but my husband would eat them on everything, and since we started changing up our eating habits I’ve started cooking with them a lot more. Travis has asked about stuffed peppers a couple of times so I thought I’d give it a go.

How do they look?

Stuffed Peppers

I searched Pinterest for the perfect recipe, but didn’t find one that I loved. So I took ingredients from a few different recipes and put them together to work with the food I already had in my house!

3 peppers sliced in half
1 pound hamburger
1/2 medium onion
brown rice (2 servings)
1/2 tsp. cumin
1/2 tsp. chili powder
1/2 c shredded cheese

First brown your hamburger, add onions to saute while you are cooking hamburger. Add seasonings.
In the meantime, cook brown rice, set aside.
Put peppers on a microwave safe plate and steam for approx. 4 minutes.
Mix together beef and rice and 1/4 c cheese then add to peppers
top with remaining cheese.

Bake on 375 for about 25 minutes.

One note: I only used three peppers but could have easily used more with this recipe. My peppers were spilling over and I had leftover filling! I thought these were really good! I even ate the pepper! Let me know what you think!
