Sometimes I live for nights where I am not making a “meal”. Where I’m not in the kitchen for an hour + getting everything ready. And then all the clean up afterwards. I remember the days of just Zachary and I and once in a while a bowl of cereal for dinner was nice. Travis, however, isn’t going to eat a bowl of cereal for dinner. He would have no problem coming home from work and cooking if he needed to, but I enjoy doing it. And I’m home, so why not!
This Turkey Ranch BLT Wrap turned out delicious. I had been looking for a light dinner or lunch meal and found something similar to this and gave it a try with some tweaks.
- Tortilla shells
- baby spinach
- turkey bacon
- sliced cheddar
- Cook your bacon. I like mine extra crisp!
- Put ranch on tortilla and spread it around
- Add sliced cheese, baby spinach, avocado, tomato and top with your bacon.
- Then roll that baby up and EAT!
It doesn’t get much easier than that. It was filling and the clean up was minimal.
When you are having an “I don’t want to cook” kind of night, what is your go to meal?
