Oh my lanta, another zucchini recipe! Are you thinking that? It is okay if you are because I sort of feel the same. But I have so many zucchini recipes that I just need to get them shared before they sit in my drafts for a year! And I still have zucchini coming out of my ears thanks to Summer’s awesome Girl Scout garden from this year so I am trying to use it up! Anyway, Have you ever had Zucchini Parmesan Chips? They are so good and are by far, one of my favorite ways to eat zucchini.
One of my favorite things about Zucchini Parmesan Chips is that my kids love them! Once I take them out of the oven they get devoured in a matter of a few minutes. They are a perfect, fun snack and I would definitely recommend eating them while they are nice and warm, because they are better that way!
They are so incredibly easy to make and in a matter of minutes, you are eating a delicious snack!
I love cooking them and then turn the oven to broil for a moment to get the cheese nice and crispy. It is SO delicious!
- 1 medium zucchini sliced thinly
- 1 tsp olive oil
- 1/2 teaspoon Italian seasoning
- salt & pepper to taste
- 1/4 cup shredded parmesan cheese
- Slice zucchini thinly for easy baking
- Toss with olive oil
- Add seasonings and stir to coat
- Layout sliced zucchini on a cookie sheet and sprinkle with cheese
- Cook for 5 minutes on 425°
- Turn oven to broil and cook just long enough to brown cheese
