Easy Breakfast Burritos


I'm always on the lookout for meals that make our lives easier.
Because lets face it-
Who wants to spend all their time in the kitchen?

I love getting to be at home taking care of my kids,
but that doesn't mean that I have all the time in the world to make amazing meals.
So I have to figure out how to make amazing meals in a shorter time period!

I've been looking for something quick that Travis can heat up before heading out the door to work,
or we can have as a quick breakfast and I found just the thing:

Breakfast burritos
and they are so easy to make too!

 Here is the recipe:

1 pkg of Jimmy Dean breakfast sausage
9 eggs
2 cups of cheddar cheese
tortilla shells
*onion and peppers if desired

Cook sausage until it crumbles
scramble eggs until cooked then add 1 cup cheese. mix until partially melted
If you are cooking onion and peppers, cook those in a separate pan while cooking the sausage
(I made 6 with peppers and onion because Travis likes them!)

Let everything cool completely-- I've *heard* you should do this so the shell doesn't tear

Once everything is cool, mix it all together in a bowl then fill tortillas, adding a little more cheese to each.
Wrap like a burrito then cover individually with saran wrap. To store, I placed burritos into a freezer bag.


This recipe made 12 burrito size and 10 fajita size (because that's what I had) 
And the Fajita size are actually really great for Tyler! 


These are super yummy and everyone has enjoyed them!
I will definitely be making more to get in the freezer because this first batch isn't lasting long!

  3. It seems really easy and can prepare it in a short time. Actually this kind of recipes are very helpful for me as a busy mum and I would definitely try this tomorrow.
