I love this Corn Casserole and I make it anytime I make potato soup. It's always my go to side dish because it goes great with the soup.
Sweet corn (drained)
Cream corn
1 box Jiffy cornbread mix
1 C. Sour Cream
1 stick butter (melted)
Cheddar cheese (set aside for top)
Mix everything together and pour mixture into greased 9x13 casserole dish. Bake 45 minutes.
Take out of oven, sprinkle cheddar cheese over top and cook for another 5 minutes.
Let stand for 5 minutes before serving.
It didn't get any easier and it's delicious! I love quick and easy dinners (and side dishes!)
I've never made it with cheese! I have to try that next time. Yum!
