This recipe was so simple. It made two loaves and we ate about half of one the first afternoon and I sent the rest with my dad for him to enjoy. Then I froze the second loaf so we could enjoy it again in a couple of weeks!
I love, love, love having a stand mixer. It's basically changed my life in the kitchen when I am making treats because I love having my hands free to grab ingredients while my mixer is working away!
After adding half of the mixture to your pans, sprinkle 2/3 of the cinnamon sugar mixture over the batter.
Then add the rest of the batter, and sprinkle with remaining cinnamon sugar.
Then I used a butter knife to swirl around through the batter.
Ingredients:
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk
- 4 cups flour
- 2 teaspoons baking soda
Cinnamon/sugar mixture:
- 2/3 cups sugar
- 2 teaspoons cinnamon
- Mix together butter, sugar and eggs
- Mix in milk, flour and baking soda.
- Split 1/2 of the batter between to previously greased loaf pans.
- Sprinkle 3/4 of the cinnamon/sugar mixture over the batter in the two loaf pans.
- Add the rest of the batter to the two pans.
- Spring the remaining cinnamon/sugar over the tops.
- Use a butter knife to swirl
- Bake at 350° for 45-50 minutes until a inserted knife comes out clean.
- Cool in pan for 20 minutes before removing.

This Cinnamon Swirl bread was so delicious right out of the over, but it was just as delicious after thawing out from the freezer! It is one that I will make again for my family for sure, as everyone loved it.
