And to be honest, when I browse Pinterest, sometimes the meals look a little less than appealing. So I decided that I wanted to share some of the things I have been eating, and break it down into what goes in what container. An hopefully these will help someone.
This chicken salad is pretty much amazing. Since I'm eating a lot of chicken these days I'm trying to mix it up so it doesn't always get chopped up in a green salad, but instead, I have some variety. I am so glad I found this and I eat it a couple of times a week, at least, for my lunch!
I love this 21 day fix approved seasoning! And I put it on everything pretty much, so I used an empty spice container to make a bigger batch this time and as you can see, it's just about gone, again!
I thaw my chicken, sprinkle with my spice and then the hubby grills it up for me. One of these days I'll probably have to do it myself, but for right now, he helps me out! I BBQ enough to last me at least 2 dinners and a lunch.
Then, using a red container to measure out my chicken. and put into the cup to chop up.
Then I use a purple container to measure my grapes and apples. I think it is about 5 grapes and 4 apple slices.
Be careful not to chop it too much or you'll end up with a mush.
Then I add a squirt of mustard and 1/4 of a red container of plain greek yogurt and I mix it up good.
And a tsp. of honey
Then mix in the grapes and apples and stir it up until it is all combined.
I lined one side of my whole grain pita with baby spinach (1/2 green) then fill up my pitas with my chicken mixture.
And I added 5 baby carrots to my lunch for another 1/2 green container.
So here is my breakdown:
- Chicken 1 red
- grapes/apples 1 purple
- plain greek yogurt 1/4 red
- baby spinach/carrots 1 green
- 4 inch whole grain pita 1 yellow
- Honey 1 tsp
