I am so ready for warmer days and BBQ'd dinners again. When the weather is cold, our BBQ goes into hibernation like we do and we basically don't touch it for a few months, which is hard when you love BBQ'd Chicken Skewers as much as I do. So when I was going through some pictures and came across this one I basically started drooling, wishing for warm weather again!
One thing that is great about this dinner is how healthy it is for you, while still tasting delicious!
I started with cutting up:
one onion,
3 peppers
enough chicken for your family ( I used 2 large breast, cutting a couple of chunks off to grill whole and cut the rest smaller for the skewer)
As you can see we had too much chicken to put onto our skewers and just placed those pieces on the BBQ to be grilled. Sometimes I add pineapple, zucchini, lemon, etc to change it up a little bit, all of which is delicious!
I also use the "All Purpose Seasoning" from the 21 Day Fix recipes to season my chicken and veggies.
I used an old seasoning container and mixed everything in:
4 tsp. onion powder
2 tsp. garlic powder
2 tsp. mustard powder
1/4 tsp. dried thyme
1/4 tsp. ground black pepper
1 tsp. sea salt
Then just shake to mix and it is ready to season your chicken and veggies. Season and let rest for at least 20 minutes before grilling.
It's that easy and you have a delicious dinner that is also healthy for you!
